Although I do not see myself going 100% vegan (I would miss European butter and cheese way too much), I do see myself eating very little meat/fish going forward. My reasons are below.
- Finding organic, grass-fed/grain-fed meat is difficult and it is usually expensive
- Meat has a huge negative impact on the environment from the cost to raise it to the cost to transport it
- Grains and beans are extremely healthy
- Organic produce is readily available
In some ways, I wish I had been eating vegan/vegetarian all along. In other ways, I am intrigued and excited by this journey. I am forever grateful to my blog and online network of friends because they have opened up my eyes to vegan/vegetarian eating. There is something greater than all of us pulling me in this direction. I am seeing the many signs all around me and I am listening to them. I am being the change in the world that I want to see. Please join me on this journey to a better lifestyle and less impact on the environment.

While I could never go completely vegetarian much less vegan, I am really impressed with your jump start. We grow a huge organic garden so I get most of my produce here at home and we raise our own organic free-range chickens. I get organic eggs and chicken and I KNOW what goes into them. However, since last year we have eaten way more veggies than ever before.
I commend you for raising your own organic chickens and growing your own organic veggies! I would love to be able to do the same and then I would eat without any worry. Self sustainability is great for the environment!
I went vegetarian after reading "Skinny B**th" - but I allowed myself one "cheat food" to help keep my sanity in pursuing such a crazy venture. My cheat food? Pepperoni pizza. Yup, whenever I felt like I needed "meat" I just had a slice of delicious pepperoni pizza. And, I still will have a slice of pepperoni pizza, but only on the VERY rare occasion. I tend to gravitate toward the cheese & veggie slices now. Plus, I no longer even have the desire to eat meat. :) Some people gave me a lot of crap for allowing a cheat food, but I figure it's my way of eating, and I can do it however I want. :)

Lisa - great suggestion about the cheat food. You're eating the food, so no one else should judge or criticize you. I commend you for eating vegetarian because that greatly reduces the impact on the environment.

Good luck with the vegan kickstart! For the same reasons (well, minus the butter, but definitely cheese), I don't think I'll ever go vegan, but I do try to limit dairy or swap it out when I can. Every small change we make helps!

Keeka an Jen - Oh the cheese! How I love thee! I just discovered a local place that makes raw milk cheese, so I know that I will never be able to give it up completely. If most of us limited meat and dairy, the results would be immense.
