Easy Ways to Give Back With Your Kids [February]

One of my parenting goals for this year is to do more volunteering activities with my 3 year old son. While we have done some activities to give back to the community, I usually need motivation to get execute the activities. Giving Families is a great organization that provides Good Mail Challenges, which are monthly activities that parents and children can do to give back to the community together.


The Good Mail Challenges are sent out on a monthly basis in the form of a newsletter. Each month, there is an activity to give back to the community. Alternative activities are also available in case the main activity cannot be completed for any reason. I really like the alternative options because they do not make me feel like I have to complete the one activity to give back to the community. I have several activities to choose from that fit my family and schedule.

Let's talk about the challenges! The February challenge was to visit a nursing home during "Social Hour." Visiting elderly neighbors allows us to make new friends and bring brightness to their days. Since my son is under 3 and it was the sick season, we decided to look at one of the alternative activities. remember not to take sick kids to nursing homes!

For our February challenge, we chose to bring a meal to a neighbor who was recovering from a medical emergency. We baked banana muffins and prepped a chicken pasta casserole. Then, my son and I took the meal and snacks over to their house. Instead of taking the stroller as we usually do for walks, we both walked on foot because the neighbor lived close. The neighbor was very grateful for the delicious food we brought. On the way back home, we talked about helping friends in need. It was a great activity to do together with my son!



One of the things that I like about the Good Mail Challenges from Giving Families is that I have great suggestions for ways that our family can give back to the community together. I can choose an activity that is appropriate for my son's age and fits without our schedule.

Fennel Essential Oil for Asthma [review]

Essential oils are a big part of my life, especially during the flu season. I mainly use essential oils for healing and boosting immunity. I also use essential oil to deodorize my home and for use in homemade cleaning products. When our Pediatrician told us that our has Respiratory Affective Disorder ("pre-asthma"), I started researching how I could use essential oils. We were already eating clean and organic, using homemade and natural cleaning products and body products. There was really nothing but whatever allergens were outside that were causing his respiratory issues. After a lot of research, I found out that there were many essential oils that were targeted at respiratory issues and asthma. Simply Earth Fennel Essential Oil is a high quality, unfiltered, undiluted essential oil with many beneficial uses.

Simply Earth is a small  family company that strives to provide eco-friendly products. They offer a number of natural products for the home, including a line of unfiltered and undiluted essential oils.

Fennel Essential Oil (foeniculum vulgare var. dulce) has an anise-like, peppery aroma. It is pressed from seeds and has a medium strength odor. The country of origin is Spain. The oil is bottled in the US. The bottle is 15ml and is made from dark amber glass. Storing essential oils in dark glass bottles is the best way to keep the high quality and protect them from going rancid.

The benefits of fennel essential oil include being supportive and restorative. Fennel essential oil has expectorant properties, which helps with respiratory disorders. Fennel essential oil helps with excessive mucus in the lungs, chronic coughs and cold, and asthma.
Usage: The main ways I have been using fennel essential oil is diffusing it on the first floor open living space. I add about 5 drops in water to the essential oil diffuser. I also plan on using fennel essential oil (diluted) as a chest rub.

Essential oils are very concentrated and it is recommended that it be diluted for any topical uses. If applied directly to the skin, essential oils must be diluted in an appropriate oil (Jojoba Oil and Grapeseed Oil make the best carrier oils, but can also use Sweet Almond Oil or Olive Oil).

Results: I have really enjoyed diffusing fennel essential oil. I was a bit skeptical at first because I"m used to fennel as a culinary spice and did not quite know what I would think about my house smelling like fennel, but I have liked it! The odor is medium strength and it lasts for a very long time. With some essential oils, the scent tapers off after a while, but the fennel scent is present until the diffuse uses all the water up. I really like that the scent is long lasting!

I love the generous 15 oz bottle and the long lasting scent of the Fennel Essential Oil. Everyone in our family has had a cold or outdoor related allergy coughing over the past 2 weeks. I have been diffusing this oil every day and feel like it has helped us to heal quicker. With the high quality and affordable prices from Simply Earth, I would recommend this company!

A Healthy Nut-Free Snack [Review]

Healthy and filling snack foods always catch my eye. When I came across Tiger Nuts, I was curious what these "nuts" were all about. Nuts are a big part of my family's snacks because they are nutritious, healthy, and delicious! Tiger Nuts are actually tubers (a root or something that grounds underground). When they dry, they resemble chickpeas in size and look. Tiger Nuts are a low-calorie, healthy, nut-free snack food that can help with weight loss.

Let's talk about what Tiger Nuts actually are. They are tubers, not nuts. If you are looking for a nut-free snack or a nut-free gluten-free flour, then this is the perfect product for you. Tiger Nuts are raw and dried. They are high in fiber, which keeps you feeling full longer and helps aid in moving food through the digestive tract. Tiger Nuts also act a prebiotic to stimulate the growth of good bacteria.

One ounce of tiger nuts (~50 pieces) contain 120 calories, 10g of fiber, and 7g of fat. Compared to other nuts, Tiger Nuts are a great low calorie, low fat, and high fiber snack.

I received a package of peeled Tiger Nuts and a package of Tiger Nuts gluten-free flour. Tiger Nuts are a great on-the-go snack and the package is portable. They are raw nuts (tubers) that have been dried and look like chickpeas. They are slightly chewy, in a satisfying kind of way. Tiger Nuts have a sweet and nutty flavor. My toddler and I have enjoyed snacking on these. The size is just right for him to be able to grab and chew on, though the package does caution not to give to young children. We eat a lot of nuts and I have really liked the change up.

Tiger Nuts Organic Gluten-Free flour was intriguing. We have done some gluten elimination diets and I have some gluten-sensitive friends, so I like to keep a variety of gluten-free flours on hand. Additionally, I like to cook and bake with gluten-free flours to change things up a bit.

Tiger Nuts flour was a new flour for me. The flour is made from ground up tiger nuts, so it has the same great nutritional benefits. The flour is milled finely. I read some reviews that mentioned the flour being gritty. I did not find this to be case when I baked Buckwheat Bites (recipe coming soon!) with tiger nut flour. I would not equate the tiger nut flour to a powdery flour like coconut flour or millet flour, but it is more fine that stone ground whole wheat flour. I really like the sweetness and heartiness that it added to my Buckwheat Bites.


If you are looking for a new nut-free snack or are diving into the gluten-free world, give Tiger Nuts a try. They are delicious and can be used in a variety of ways.

Organic Grass Fed Cheese by Rumiano [Review]

Purchasing grass-fed dairy is very important to me. While I am not a purist, I will look for grass-fed cheese, milk, and yogurt and purchase it when available. Rumiano Cheese Company is one of the oldest family-owned cheese companies in California, offering organic grass-fed cheese that is also Non-GMO project verified.

I remember Rumiano cheeses were one of the first grass-fed cheese brands that I began purchasing. Rumiano cheeses are available at one of the local Whole Foods stores. They are found in the refrigerated cheese aisle and are easy to spot by the colorful packaging. Each package contains 8 oz of cheese. Cheese comes in bars or sliced, depending on what your store offers.


Why grass-fed cheese? Cows naturally feed on grass and plants. That is what their stomachs are designed for. Feeding cows their natural diet is going to result in the healthier and most nutritious milk. There are many health benefits, not only for the cows, but for you to eat grass-fed dairy.

  • Higher nutrition
  • Higher Omega-3 fatty acids
  • Better Omega 3-to-6 ratio
  • Higher CLAs (conjugated linoleic acid)
  • Higher Vitamin E and Beta Carotene
The Northwestern Coast of California allows pretty much year round access to grass pastures. When the weather is too wet or cold to be out in the pastures, haylage (partially dried silage) and silage (compacted grass and green fodder) are used to feed the cows. 

I love that Rumiano takes such great measures to ensure that cows are truly grass-fed. As a consumer, this is very important to me when choosing which type of cheese I am going to buy. Though I don't buy grass-fed cheese 100% of the time, I will go out of my way to purchase it at Whole Foods (making an extra stop) or at the farmers market. 

Rumiano grass-fed cheese comes in a variety of types, including Mild, Medium and Sharp Cheddar, Chipotle Cheddar, Colby, Fontina, Gouda, Havarti, Monterey Jack, Mozzarella, Pepper Jack, Reduced Fat Cheddar, and Smoked Mozzarella. What a great line up and such a variety of cheeses! Medium Cheddar and Smoked Mozzarella are our favorite flavors!. The cheddar does taste creamier and more rich than a even a conventional cheddar that I could purchase at Whole Foods. The cheese melts well whether you are making grilled cheese or adding it to a cheesy baked dish. The Smoked Mozzarella adds such depth and flavor to grilled cheese or to an egg sandwich. 

If you are looking for a high quality grass-fed cheese, try Rumiano. Rumiano grass-fed cheese is affordable and are more nutritious.

Easy Quinoa Pancakes [Recipe]

I love breakfast recipes that can be quickly made. Fried eggs are my go-to breakfast because they can be made quickly. Serving eggs day after day make me long for something different. Pancakes are my second go-to breakfast. Though they take a little bit more time to make, I have found some recipes that are fairly quick to mix and I always seem to have the ingredients on hand (or can substitute).

A two-ingredient pancake recipe (1 mashed ripe banana, 2 eggs) prompted experimenting with additional ingredients like homemade sourdough starter, stone ground wheat flour, gluten-free flours like buckwheat flour or coconut flour, hempseed protein powder, spirulina powder, or green superfood powder. If the mixture is too dry, I add yogurt or milk (even coconut milk) or more eggs. The recipe below is easy to make and turns out well whether the mixture is too runny or a bit on the dryer side.

Easy Quinoa Pancakes recipe was created on our recent beach trip. I received a few samples of NurturMe Protein Packed Quinoa dried baby food. These individual packets are great for on-the-go and travel. I love that the quinoa powder can be mixed into just about anything to boost protein and nutrition. Just add liquid! During our beach trip, I used the quinoa powder in the pancake batter and also added to my toddler's yogurt. The quinoa powder mixed in smoothly and I could not even tell it was in there. That is a plus in my book! I love the versatility of this powder for any age from baby to adult.


Easy Quinoa Pancakes are an easy breakfast for busy parents and when traveling. To start, a ripe banana is mashed into eggs. Though these are the only 2 ingredients you need for the pancakes to form, you can always add any or all of the additions below.

Easy Quinoa Pancakes

Dairy-free (can omit milk or use nut milks), vegetarian, nut-free (omit nuts)

Yeild: 2-3 servings

Ingredients
1 ripe banana, mashed
2 eggs
1/4 cup quinoa powder (NurturMe Protein Packed Quinoa)

Other Additions (some or all)
1/4 cup yogurt or milk (dairy or non-dairy)
1/2 cup flour (wheat or gluten-free)
1 tbsp hemp protein powder
1 tbsp cup ground flax seeds (can sub 1 tbsp cup chia seeds)
1 tbsp cup chia seeds (can sub 1 tbsp ground flax seed)
2 tsp vanilla extract
1 tsp cinnamon

Directions
  1. Mash banana into the mixed eggs.
  2. Mix in NurturMe quinoa powder.
  3. Add additional ingredients (some or all).
  4. If mixture is too runny for your liking, add more dry ingredients (flour). If the mixture is too thick for your liking, add more wet ingredients (milk, eggs).
  5. Heat griddle or pan to medium heat with butter or oil.
  6. Cook pancakes for a few minutes per side until golden brown.

I have lavender essential oils from several different brands. From my experience, essential oils will smell different based on the country of origin, the land they are grown on and even the time of the year that they are harvested. No two lavender essential oils are going to smell the same unless they were grown in the same location and harvested and processed at the same time. Nonetheless, this lavender essential oil smells strong and floral. Just what I would expect from a therapeutic grade, pure lavender essential oil.

The main benefits of lavender essential oil are:
  1. Improve mood
  2. Fight insomnia
  3. Calm the mind
  4. Neutralize stress and anxiety
Usage: The main ways I use lavender essential oil is to add to homemade body products like facial scrubs, to diffuse 5-10 drops in water in the essential oil diffuser when I feel stressed and on edge, and to put a few drops on my pillow at night to help me sleep. Since this oil is 100% pure, it is very concentrated. A little goes a long way.

Essential oils are very concentrated and it is recommended that it be diluted for any topical uses. If applied directly to the skin, essential oils must be diluted in an appropriate oil (Jojoba Oil and Grapeseed Oil make the best carrier oils, but can also use Sweet Almond Oil or Olive Oil).

Opportunities for Improvement: The soft plastic part of the dropper top seems to let the scent of the oil through. The bottle only comes with the dropper top, while other brands ship their oil with a hard plastic cap. I like having the dropper top and would like to see the company invest in a better quality top. I have two other 4 oz bottles of essential oils with the dropper caps by 2 different brands. One of the brands does not let the oil scent through. The second brand lets the scent through and the essential oil actually started to crystallize on the dropper top. The essential oil scent stays on my fingers when I use the dropper and even made my whole fridge smell like peppermint essential oil. Not too bad for freshness, but my food started to smell and taste like peppermint essential oil. I assume this is what is going to happen with the dropper top because they seem to be similar in materials.




I love the generous 4 oz bottle of the Lavender Essential Oil. This bottle will last a long time. I plan on using the lavender essential oil for home made body products and in the diffuser. I would like to see GoPure Naturals move toward organic certification to ensure no pesticides or unwanted chemicals in the lemon oil. The price is reasonable for the quality and the amount of essential oil.
